Stir Fried Mussels

Stir fry Mussels
- 1 Kg St Austell Bay Mussels
- 1 pk Bean Sprouts
- 1 small tin of bamboo shoots
- 1 small tin of water chestnuts
- 1 Ginger Chopped
- 1 whole onion sliced into quaters
- 3 cloves Garlic crushed
- 3 spring onions
- 1 whole chillie chopped
- 1 bell pepper sliced
Add the mussels to the pan, cover the pan with a lid and cook the mussels for about 3-4 minutes, giving the pan a shake from time to time. The mussels are cooked when they've opened up.
leave to cool and then remove the meat but leave about 6-8 in their shells for later
heat the oil in the pan
add the garlic and ginger and fry for about 1 min
then add the onions, peppers and chillies and fry for about 30 seconds
then add the water chestnuts, and bamboo shoots and fry for 30 more seconds
add the cooked mussel meat and bean sprouts and fry for about 30 more seconds
then add the black bean sauce and a little water if needed and stew for about 2 mins
then serve in a bowl add the shell on mussels and chopped parsley and crack pepper and enjoy
