Stir fry Mussels


  • 1 Kg St Austell Bay Mussels
  • 1 pk Bean Sprouts
  • 1 small tin of bamboo shoots
  • 1 small tin of water chestnuts
  • 1 Ginger Chopped
  • 1 whole onion sliced into quaters
  • 3 cloves Garlic crushed
  • 3 spring onions
  • 1 whole chillie chopped
  • 1 bell pepper sliced


  • Add the mussels to the pan, cover the pan with a lid and cook the mussels for about 3-4 minutes, giving the pan a shake from time to time. The mussels are cooked when they've opened up.
  • leave to cool and then remove the meat but leave about 6-8 in their shells for later
  • heat the oil in the pan
  • add the garlic and ginger and fry for about 1 min
  • then add the onions, peppers and chillies and fry for about 30 seconds
  • then add the water chestnuts, and bamboo shoots and fry for 30 more seconds
  • add the cooked mussel meat and bean sprouts and fry for about 30 more seconds
  • then add the black bean sauce and a little water if needed and stew for about 2 mins
  • then serve in a bowl add the shell on mussels and chopped parsley and crack pepper and enjoy
